This course leads you through all aspects of advanced kitchen, larder, production and patisserie work. It will allow you to develop a broad range of practical culinary skills that will equip you for the rigours of the modern kitchen environment. An ideal student for this course is one who is motivated with a desire to learn and is passionate about gastronomy.
You will learn advanced skills in the preparation, cooking and finishing of various dishes, ranging from fish and meat to desserts. There will an opportunity to develop advanced decorating techniques and a unit on fermented dough.
In the theory lessons you will learn about working effectively with others, health and safety and explore new ideas and flavours through the gastronomy unit. You will be able to participate in Masterclass demonstrations.
