Bakery Level 2

This course further develops the bakery skills that you gained at level 1.


About the Course

It allows you to develop additional skills in cake decoration and patisserie. This will prepare you for work in the baking industry at an operational level, in both confectionery and bread production.


You are required to have a full set of specialist equipment which you should have already have purchased for your level 1 course. The bakery is part of the catering department. It has modern spacious facilities and is well equipped with up to date machinery and equipment.

Approximately 40% of the course is theory. As part of the course you may sometimes carry out research on the internet, at home or in the learning centre. You will be required to study functional skills or GCSE English or maths if you do not already hold a minimum of GCSE grade C. (Many employers ask for a minimum of GCSE grade C in both maths and English).


Key Units

You will develop skills in:

  • Processing bread
  • Proving
  • Baking and frying fermented dough products
  • Cake decoration skills in making covering pastes, finishing and packing fermented dough products
  • Handling and storing bakery ingredients and supplies
  • Using chocolate couverture and ganache

Where does this Lead

You could progress onto a level 3 patisserie diploma course or a part time cake decoration level 1 qualification designed to develop their cake decorating skills even further. You can progress onto further study for science or technical qualifications leading to test bakery or research and development.
