About this Course

The catering department at The Sheffield College has an exceptional reputation at both national and international levels. The department is known for delivering excellent training in outstanding industry kitchens that are equipped with an enviable range of cutting edge equipment.

Key Units

This course will enhance your current classical culinary skills and help develop a greater repertoire of culinary techniques through the study of more complex dishes. In addition, you will develop supervisory and kitchen management skills whilst further developing your practical skills. Your skills development will be focussed on the preparation and cooking of:


  • Complex meat and poultry dishes
  • Complex shellfish and fish dishes
  • Complex sauces and dressings
  • Complex vegetable preparations
  • Complex canapes and cold products
  • Complex pasta dishes
  • Complex soups

Entry Requirements

The entry requirements required for the course are a Level 2 qualification in Professional Cookery or significant experience in the catering industry.


Other circumstances may be considered for discretionary enrolment, should you not hold the above entry requirements. 

Commitment is key to achievement as this course requires 95% attendance to attain success.

Assessment

  • Coursework portfolio
  • Continual practical assessment on demand 
  • Assessment of underpinning knowledge specific to each unit (subject theory content)

Where does this Lead

On successful completion of this two-year programme you will gain a City & Guilds NVQ3 in Professional Cookery (Kitchen and Larder).


Pathways tend to be continuing or progressing further in employment, or a career change into hospitality.

Once you have finished this course you could progress to the  NVQ3 Patisserie.

This is a two-year programme. The course is delivered on Wednesdays (10am - 5.30pm) during college term-time.

Extra Costs

You will be required to purchase a chef's uniform, appropriate work safe shoes and professional chef's knives.


Relevant textbooks will be suggested but are an optional purchase only.
