About this Course

The course is designed for people wishing to learn and gain valuable skills and knowledge to progress into employment in the food Industry. You will learn about a variety of ingredients, methods and techniques to prepare, mix and finish a variety of sweet and savoury products through bakery in practice and basic food preparation skills.

Key Units

The course is designed for people wishing to learn and gain valuable skills and knowledge to progress into employment in the food Industry.  You will learn about a variety of ingredients, methods and techniques to prepare, mix and finish a variety of sweet and savoury products through bakery in practice and basic food preparation skills.

The course will also prepare you for employment in the diverse food industry covering essential skills such as food safety and hygiene, effective communication for a food business, applying for a job in a food business, and customer service skills. You will be expected to complete allergen awareness training. Further opportunities to develop your interview skills and CV writing will assist your career progression.

  • Selecting and mixing ingredients
  • Bakery in practice - mixing, shaping, finishing bread and confectionery products
  • Food preparation and cooking using a variety of processing methods and ingredients 
  • Food safety and hygiene
  • Allergen Awareness
  • Effective communication for a food business
  • Applying for a job in a food business
  • Customer service skills
  • CV writing
  • Personal development 
  • Interview techniques

On your programme you will also study Functional Skills or GCSE English and Maths qualifications, if you do not already hold a minimum of grade 4 (C) at GCSE.

Entry Requirements

Minimum of 4 GCSEs A* - E / grade 2 or above, including English Language. If you do not currently hold grades A* - C / 3 or above at GCSE, you will also work towards improving your achievements in Maths and English.

Assessment

The assignments are spread out evenly over the academic year.

All units will be individually internally assessed using a range of methods which may include:

Practical Assessments which are assessed through observation of practical tasks.

Written assessments are completed through questions and completion of documents such allergen sheets, CV writing and job applications.

Taster sessions are available on request.

Extra Costs

You will need to purchase some specialist equipment before the start of the course, including a catering uniform and other equipment. The approximate cost of this equipment is £250.  

Students in financial hardship can apply to the Learner Support Fund for help with these costs
